Salt Flats restaurant, new in Cathedral City, celebrates desert cuisine

Salt Flats, a new restaurant in Cathedral City, is putting cuisine from the world’s deserts on the menu. 

Co-owners Vince Combrevis and Michael McVay, both Rancho Mirage residents, opened the restaurant's doors in late October. Salt Flats — in name, decor and menu — is inspired by dry, arid regions around the world, with a modern American spin. 

McVay, who is also the restaurant’s chef, said the idea behind “modern American” is that residents can live next door to anybody from anywhere in the world and they’re still in America. There is no nationality to American food, he added. 

“But one of the things I found was lacking in the Palm Springs area, the desert area here: No one really celebrated desert food,” he said. “And we've got a lot of desert regions around the world that you can tap into for flavors and cuisine and styles.”
